🍸 Brandon’s Weekly Lesson:
Facts NOT Feelings
Most servers describe a dish by just saying how popular it is or saying something about themselves.
The guest is not asking: “What do you recommend for yourself?”
They are asking: “What do you recommend for me?”
I will admit, there are times they actually want to know what you like or dislike…but not right away.
Typically, they are asking about a dish because they are on the fence.
You should help them get off the fence and FIND WHAT THEY WOULD LOVE.
Your description should be 8-12 words.
It should include the FACTS about the dish instead of your opinion or how you feel.
I will give a few examples:
The filet mignon is - “8 oz, broiled, topped with our compound butter and your choice of side.” - 12-13 words
The Halibut is - “6 oz, Pan seared, served with brussel sprouts and a lemon sauce” - 12 words
The chicken fingers - “3 tenders, house-made, served with hand cut fries” - 8 words
I also recommend asking a question or explaining something that might be confusing about the dish.
If there is anything with a weird name in the description on the menu, the guest is probably asking because they are confused what that is.
Explain it to them!
The question could be a lot of different things.
Here are some examples that you can add after the description:
What else were you deciding between?
What do you usually like/get?
Do you like lean steak or marbling in your steak? (specific to steaks)
Did you want to do that? (to make it easy for them to say yes)
Were you confused about anything specific in the dish? (or something like this)
