The 7-Step Flow Your Team Should Master Tonight
Most servers wing it.
The great ones? They follow a rhythm.
This is the 7-step service flow Brandon uses to increase check averages without sounding pushy — and to give guests a smoother, more thoughtful experience.
🍸 Start With This:
✅ Step 1: First Greet + Beverage Offer
Start with a quick welcome and a genuine compliment.
Then: “Would you care for tap, bottled still, or sparkling?”
Follow with: “May I offer you a beverage?”
Pause. Then list: mocktails, cocktails, beer, wine, soda — in that order.
Mocktails first. It matters.
✅ Step 2: Drink Drop + App Order
Verbiage matters here:
“What are we sharing for starters?”
Or: “Which one sounded good to you?”
Plant another seed: a few new app ideas.
✅ Step 3: Silent Quality Check
Before apps arrive, you should be watching drinks — not waiting to be flagged.
Notice the ⅓ glass point? You’re ready to ask:
“Another one now or in a few minutes?”
✅ Step 4: App Drop + Pre-Mark for Mains
Don’t wait until the apps are gone.
Start pre-marking with steak knives, sauces, spoons while clearing.
✅ Step 5: Entree Drop + Verbal Check
2 minutes or 2 bites in:
“How is everything?” or “What else may I bring you?”
Make eye contact with each guest. This is where you win repeat business.
✅ Step 6: Pre-Bus + Plant the Dessert Seed
Same rhythm as starters:
“Start considering dessert — we have X, Y, Z… I’ll give you a few minutes.”
If they’re into it? Pre-mark with spoons and get that final add-on.
✅ Step 7: Check Drop + Meaningful Goodbye
Don’t just say “Thanks, have a good night.”
Call back to the moment:
“Next time you’ve gotta try the short rib.”
“Come see us Friday — we’ve got live jazz.”
This is the final impression. Make it matter.

1️⃣ Train the rhythm — not the script.
This isn’t a memorized pitch. It’s a flow your team should adapt to their own voice.
2️⃣ Upsells = timing, not pressure.

3️⃣ Goodbyes = future bookings.
Don’t just cash them out. Give them a reason to come back.
