šø Brandonās No-BS Service Lesson:
Turn More Tables, Make More Money
Letās be real:
āTurning tablesā can sound cold.
Especially if youāve ever had a manager barking:
āFlip it! Flip it! We need that table!ā
But Brandonās approach is different.
Itās service-first. And it works.
Because when itās done right, guests donāt feel rushed.
They feel taken care of.
šø Start With This:
ā 1 - Make efficiency part of the service ā not the sprint.
Table-turning isnāt about shoving people out the door.
Itās about cutting down on friction and delay.
Examples:
Donāt wait until they ask for a steak knife.
Donāt make 6 trips when 2 will do.
Donāt leave app plates sitting into the entrĆ©e.
Train your team to manicure and mark as they go, not just when clearing the check.
ā 2 - Focus on āunobtrusive service.ā
Interruptions slow things down.
And phrases like āHereās some more napkinsā or āIāll go get that for youā break the guestās conversation flow.
Encourage your team to skip the announcement. Just do it. No extra words needed.
ā 3 - Dessert isnāt just a sell ā itās a lever.
When you want to keep a table longer, use dessert to stretch the check. When you need to turn, use tighter phrasing and less runway.
The key is intentionality.
Use language like:
āWhat are we sharing tonight?ā
āStart thinking about dessert ā Iāll be back in a few.ā
āStill sipping that espresso martini, or ready for round two?ā
šø 3 Quick Wins You Can Try Tonight:
1ļøā£ Coach foresight, not just tasks.
Ask: āWhat would you bring to this table next?ā
This trains anticipationācrucial for fast, smooth service.
2ļøā£ Remove the running commentary.
Cut filler phrases like āIāll go grab that.ā
If they see youāre already on it, itās 10x more impactful.
3ļøā£ Use slow shifts as training reps.
Mid-week lulls are perfect for stretching service skills: food descriptions, dessert storytelling, selling to-go boxes.
Turning tables well is a skill.
And when itās done right, you get:
ā
Bigger revenue on your busiest nights
ā
Better guest flow
ā
A smoother shift for everyone involved
